- 1/2 cup blanched green peas or finely chopped green onions for garnish (optional)
Instructions:
- Prepare the Soboro:
- Heat a non-stick skillet over medium heat.
- Add the ground meat and cook, stirring frequently to break it into small pieces, until the meat is no longer pink.
- Stir in soy sauce, mirin, sake, sugar, and grated ginger. Continue to cook until the liquid is mostly evaporated, and the meat is evenly coated with the sauce.
- Make the Scrambled Eggs:
- Beat the eggs in a bowl with sugar and salt.
- Heat a separate non-stick skillet over low heat.
- Pour the beaten eggs into the skillet and cook, stirring constantly, to create small, soft curds. Remove from heat when the eggs are cooked through but still moist.
- Assemble the Donburi:
- Divide the cooked rice into bowls.
- Spoon the soboro over one-half of the rice.
- Spoon the scrambled eggs over the other half of the rice.
- Garnish with green peas or chopped green onions if desired.
