Ingredients

To make Lubia Polo, you’ll need the following ingredients:

  • For the rice:
    • 2 cups of basmati rice
    • 1 teaspoon salt
    • 3 tablespoons vegetable oil
  • For the sauce:
    • 300 grams of ground beef or diced lamb/chicken
    • 200 grams of green beans, chopped into 1-inch pieces
    • 1 medium onion, finely chopped
    • 2 tablespoons tomato paste
    • 1 large tomato, finely chopped
    • 1 teaspoon turmeric
    • 1 teaspoon cinnamon
    • Salt and pepper to taste
    • 3 tablespoons vegetable oil
  • Optional:
    • A pinch of saffron dissolved in warm water for added aroma and color

Instructions

  1. Prepare the Rice:
    • Rinse the basmati rice under cold water until the water runs clear.
    • In a large pot, bring water to a boil, add salt, and cook the rice for about 7-8 minutes until it’s semi-cooked. Drain and set aside.
  2. Cook the Sauce:
    • In a large pan, heat the vegetable oil over medium heat. Sauté the onions until golden.
    • Add the ground beef or diced meat, and cook until browned.
    • Stir in the chopped green beans, tomato paste, and diced tomato. Cook for a few minutes until the beans are tender.
    • Add turmeric, cinnamon, salt, and pepper. Mix well and let it simmer for 10 minutes. Adjust seasoning as needed.
  3. Layer and Steam:
    • In the same pot you used for the rice, add a layer of cooked rice, followed by a layer of the sauce. Repeat until all ingredients are used, finishing with a layer of rice on top.
    • Drizzle the saffron water (if using) and 3 tablespoons of vegetable oil over the rice.
    • Cover the pot with a kitchen towel and lid to seal in the steam. Cook over low heat for about 30-40 minutes until the rice is fully cooked and infused with the flavors.
  4. Serve and Enjoy:
    • Gently mix the rice and sauce together before serving to distribute the flavors evenly.
    • Pair it with a side of yogurt or salad Shirazi for an authentic Persian experience.

Tips for Success

  • Use fresh green beans for the best texture and flavor.
  • Saffron adds an authentic touch, but you can skip it if unavailable.
  • Be patient while steaming, as this step is essential for developing the dish’s aromatic qualities.
